Tips Of Freezing Your Pepper

Decide if you need to scald the peppers with water. Scalding is only necessary if you plan to cook them after they have thawed.
If you plan to use green peppers in fresh, raw, cold dishes, don’t burn them. Skip the scalding step and go to the freezing step. Frozen green peppers are crispy when thawed.
However, scalding green peppers with water is a very important step if you plan to use them in cooked food. Scalding removes enzymes and bacteria that can destroy the peppers’ nutrition, taste and color over time. The advantage of scalding with water is that your peppers will retain their status and nutritional value longer in the freezer.

Fill a large pot with water. Boil the water on the stove.

Fill the pot two-thirds full of water. If the amount of water decreases significantly during scalding, add some hot water until it returns to two-thirds of the initial amount.

Allow some time for the water to boil before proceeding to the next step.

Prepare a large bowl of ice water. Pour a plate of ice cubes, or about a dozen, into a large bowl. Pour cold water about two-thirds of the way into the bowl.
Ice is added continuously throughout the process to maintain the necessary low temperature.
Use a bowl at least the size of the pot.

Boil peppers. Transfer the green pepper to the boiling water and let it sit for a short time.

The large green peppers should be blanched for three minutes. Green pepper strips, slices and rings only take two minutes.

Start the timer as soon as you put these peppers in the water.

The same bowl of water can be used to heat five green peppers.

Quickly dip the green pepper in ice water. As soon as the peppers are cooked, use a slotted spoon to transfer them from the hot water to the ice water.
The ice water will soon cool the peppers and stop cooking.
Let these peppers cool for as long as they’re hot.

Drain the green peppers. Put the peppers in a colander and let them drain.
As another option, use a slotted spoon to remove the green peppers from the ice water and place them on a clean kitchen paper towel.
